Apple Bread Recipe - 2 loaves

1 Dec 2012 -- Jim and I have been making this treat to much applause, so here it is:


1 c. oil [we use "mild" olive oil]
3 eggs
2 c. sugar
1 teaspoon vanilla

3 cups of apples, diced
1 cup chopped, lightly toasted walnuts

3 cups all-purpose flour [we use white whole wheat]
1 teaspoon cinnamon
1 teaspoon baking soda
1 teaspoon salt

PREHEAT oven to 325 F and grease the bottoms and sides of 2 regular loaf pans.

COMBINE and set aside the oil, eggs, sugar, and vanilla.

SIFT [or not] flour, cinnamon, soda and salt. Mix well.

ADD gradually the dry ingredients to oil mixture.

FOLD IN apples and nuts. Dough will be heavy and stiff.

DIVIDE dough between the 2 loaf pans.

BAKE at 325 degrees F for about 70 min or until a toothpick in the center comes out clean.

COOL in the pans for 10 minutes, then turn out on wire racks.
